Svan Food: What to Order and What to Ask

Recognise kubdari, tashmijabi and chvishtari, then ask about the kitchen's version. Arrange meals and dietary requirements before arrival.

Overview

Start with the dish, then ask about the kitchen's version. Kubdari, tashmijabi and chvishtari give you three useful names to recognise on a menu in Svaneti. None tells you everything about ingredients, portion size or preparation. This guide helps you choose a meal; it does not promise that every guesthouse serves the same dishes.

Three dishes to recognise

Kubdari is filled bread associated with Svaneti. The official Georgia Travel description uses diced meat with seasoning. Do not confuse it with cheese-filled khachapuri. Ask which meat the kitchen uses if you avoid a particular kind.

Tashmijabi combines potatoes and cheese into a hot, stretchy dish. Georgia Travel's account explains the characteristic texture. It contains dairy; a potato-based name does not make it a vegan option.

Chvishtari combines corn flour and cheese. It differs from plain mchadi, the cornbread often served with cheese alongside it. The official guide to mchadi and chvishtari describes this distinction. Ask about the cooking fat and other ingredients rather than inferring them from the name.

For a first shared meal, choose one filled bread or hot potato dish, then ask what vegetables, beans or salads are available. This is a way to balance the order, not a prescribed traditional menu. Check portion sizes before ordering several substantial dishes for one person.

Svan salt: read the ingredients

Svan salt is a seasoned salt, not a salt-free herb mix. Ask to see the ingredients if you need to avoid a particular seasoning. For a food souvenir, a clearly labelled packet is more useful than an unlabelled bag whose contents you cannot establish. Taste the food before adding more salt.

Recipes and spellings can vary. A different Latin spelling on a menu does not by itself establish a different dish. If you enjoyed something, ask the cook to write down its name; a photograph of the menu can help you recognise it later.

Arrange guesthouse dinner before arrival

When choosing where to stay in Mestia, ask whether dinner is available, whether it needs advance notice and what time it is served. A room booking is not confirmation of a meal. On an arrival day, tell the host if your transport is delayed instead of assuming the kitchen will remain open.

Explain requirements concretely: no meat, no fish, no dairy, or the specific ingredient you must avoid. These are different requests. For an allergy, ask about both ingredients and shared preparation; a kitchen may be unable to meet the requirement. Do not treat a friendly response as confirmation of a preparation method that has not been discussed.

For a walking day, arrange breakfast timing and food to carry separately. Do not assume a guesthouse dinner includes a packed lunch or that an unplanned stop will serve meals to visitors.

An ordinary dinner is not a booked supra

The supra experience has its own page because an arranged cultural evening is different from ordering food. If that is what you want, discuss the format, language and what is included beforehand. Do not expect a host to organise a performance simply because you are staying in the house.

You can decline a dish or drink politely. Explain preferences early and let the host say what is feasible. For a broader visit, connect a meal with Svaneti's culture, rather than trying to sample an entire cuisine in one sitting.
